Hello! We sometimes do remove lymph nodes, but often this is for the purpose of histology sampling ie looking under a microscope to see what's going on in that lymph node. The easiest possible lymph node is usually chosen for this eg if a popleteal (behind the knee) lymph node is enlarged, then that one would tend to be chosen.
The lymph nodes in the neck are very close to major blood vessels and nerves. Furthermore, they often form a chain and communicate with other lymph nodes by means of lymphatic vessels, so removing just one would be unlikely stop a cancer. It is common to try chemotherapy for cancers of the lymph node eg lymphoma and other cancers that may have spread to the lymphatic system.
